Now, use the Basic Bread Recip but don't do the second rise.

Once the first has completed, simply divide up into round balls, roll out and top with your favourite toppings. Roll as thick or as thin as you like, but I always think it is better to have thin and crispy, that way you keep the amount of bread to a minimum, which is better for you.

pizzaHere are some suggestions:-

Now I always start by drizzling olive oil over the base before I do anything else. Also oil or butter the pizza dish before placing the pizza on it.

Asparagus & Mozzarella Cheese

Drizzle Olive Oil on the pizza base.
Sprinkle with fresh thyme (you can use
dried if you wish)
Tear up the mozzarella and lay on the base.
Cut the asparagus in half lengthways and lay on top.
Another drizzle of oil, fresh black pepper and into the oven until golden.

As it comes out of the oven sprinkle on some fresh lemon juice, not a lot just enough for a taste.

Roasted Vegetables

I use leftover roasted vegetables for this, if you do not have any simply put a selection of things like courgettes, aubergine, pepper, fennel, carrot into the oven with oil, lemon, garlic & seasoning and roast for 40 minutes.

Leave to go cold and you can mix it into all kinds of things like rice or couscous, or use it for pizza!

Drizzle Olive Oil on the pizza base.
Thinly slice one or two garlic cloves and lay on the base of the pizza.
Lay the roasted veg on the top.
Season with black pepper, put extra oil if you need it and into the oven until the base cooked.

When it comes out the oven, put fresh basil and thin slices of Parmesan cheese.

Mushroom & Mozzarella

Thinly slice a mix of mushrooms, try and get a few different types, but make sure they are really thin when you slice them.

Drizzle oil on the base.
Layer the mushrooms on the base.
Sprinkle with black pepper.
Layer over thinly sliced garlic.
Rip up the mozzarella and lay over the top.
Drizzle with a little more oil.

Put in the oven until the base is cooked, and then as it comes out, put plenty of fresh basil or rocket, and again, a drizzle of oil and more black pepper.

Spicy & Hot

Spicy and HotNow I use chorizo sausage for this, but you use whatever spicy meat you like, but please, get it from a deli counter, do not put plastic processed meat on this, that is just an insult to all your hard work!

Drizzle the base with Olive Oil.
Thinly slice a red chilli (leave the seeds in for seriously hot!)
Scatter half on the base.
Layer thinly the spicy meat.
Layer a thinly sliced garlic clove.
Add a layer of finely chopped spring onions.
Top with another thin layer of Gruyere cheese.
Put on plenty of black pepper and a dash more oil.

Put in the oven until the base is cooked. When it comes out of the oven, sprinkle the remaining chilli, and fresh coriander and a little more oil.

Cheese & Tomato – The Margarita

Now you can make this fantastic, just by adding a couple of extra ingredients, and this for me is the best margarita you can have!

Drizzle Olive Oil on the base, crush and spread over a clove of garlic.
Rip up a mozzarella cheese and lay on the base.
Slice up tomatoes and please, really good ones, not the tasteless rubbish you buy in a plastic box, and lay on the base.
Add black pepper and then slithers of Parmesan cheese.
Drizzle with a little more oil and into a hot oven until bubbling.
When it comes out top with basil leaves.

The joy of Pizzas is you can really do what you like, but the rule is always to keep it simple. Do not overload with too many tastes otherwise you loose the wonderful simplicity of them.

You can also turn them into sweet pizzas, just work on the same principle, a little oil first and then try them with blackberries and other fruits which taste wonderful when hot. Serve them with crème fresh or yogurt, it is up to you. Start being creative and the world is your oyster!

Children love making pizza and the good thing about that is you lay out all the ingredients they build the pizza and then they enjoy eating them. For something a little different or for picnic food, make the pizza base in the same way, but put the ingredients on just half and then fold it up to make a sort of Cornish Pasty shape. Put a little hole in the top, make sure the edges are sealed and cook in the oven until the dough is cooked. Pizza packages, all made by you so you know exactly what is in them.
