Cooked mussels

Cooked Mussels

Mussels (I suggest at least two handfuls each, it looks a lot but you are only eating the bit inside!)
4 cloves of garlic.
1 small onion finely chopped.
A generous slug of olive oil.
A pinch of dried crushed chilli.
A class of white wine.
Chopped parsley.

In a big pan, put the oil, garlic and onion and cook until just soft, do not let it brown. Add the chilli.
Next put in the wine so that it steams up and them throw in the mussels and put on the lid.
Give them a shake and wait about 4 mins.
Look inside and you will see if they are cooked because they will be open and all pink.Serve the mussels into bowls.
Then I always sieve the juice to make sure that there are no gritty bits. Pour over the mussels. Sprinkle over the parsley.
Serve with fresh bread to mop up the juice.

If you are having a really indulgent day you can add some double cream to the juice and mix in, and then pour over.
